The Experience
The Helle Dele Outdoor Chef Knife | Curly Birch & 12C27 Stainless Steel brings the control of a refined kitchen knife into the places where memorable meals often begin: beside the campfire, at the cabin, around the backyard grill, or wherever a proper cutting board can be set down.
Its 6.29-inch blade combines elements of a traditional European chef knife and a Japanese Santoku, creating a versatile profile with enough length for larger ingredients while remaining manageable during finer preparation. A tall blade provides useful knuckle clearance, while the full-flat grind moves efficiently through vegetables, meat, herbs, and other camp-kitchen staples.
The name Dele carries a fitting double meaning in Norwegian: to split and to share. It reflects a knife designed not merely for preparing food, but for the meals and company that follow.
Scientific Engineering
- Alleima 12C27 Stainless Steel: Developed specifically for knife blades, 12C27 offers a practical balance of sharpness, toughness, corrosion resistance, and ease of maintenance. Hardened to approximately 59–61 HRC, it can hold a fine working edge while remaining more approachable to sharpen than many extremely hard specialty steels. Its stainless composition also makes it well suited to food preparation, outdoor humidity, and changing camp conditions.
- Polished Blade Finish: The highly polished surface creates a clean culinary presentation while making the blade easier to wipe down after cutting moist or acidic foods.
- Full-Flat Grind: Rather than concentrating the bevel near the cutting edge, the blade tapers gradually from the spine toward the edge. This reduces resistance as the knife passes through food, supporting smooth slicing, dicing, and precision preparation.
- Hybrid Culinary Profile: The blade combines the curved working edge of a European chef knife with the compact control and broad profile associated with a Santoku, balancing rocking cuts, straight chopping, and deliberate slicing.
- 3 mm Blade Thickness: The spine is substantial enough to support firmer chopping and outdoor use without turning the knife into a thick, wedge-like field blade that struggles during food preparation.
- 37 mm Blade Height: The tall blade creates practical clearance between the user’s knuckles and the cutting surface while also providing room to guide ingredients with the flat of the blade.
- Full-Tang Construction: The blade steel continues through the handle, creating a strong structural foundation capable of handling the added demands of camp, cabin, and outdoor cooking.
- Flat Bolster Transition: The open transition between handle and blade supports a secure pinch grip near the blade for greater control during detailed chopping.
- Curly Birch Handle: The ample-bellied handle draws from traditional Nordic outdoor knives, filling the hand comfortably during both controlled slicing and heavier cutting. Natural grain variation gives every handle its own visual character.
- Vulcanized-Fiber Liners: Durable liners reinforce the transition between the steel tang and natural wood while adding a refined visual border along the handle.
- Leather Blade Protector: The included genuine leather guard covers the blade for safer drawer storage and transport without adding the bulk of a conventional belt sheath.
Boutique & Conservation Values
- One Knife Across Multiple Kitchens: Designed to move naturally between the home kitchen, cabin, barbecue station, campsite, and outdoor gathering space.
- Purposeful Material Selection: Stainless knife steel, full-tang construction, natural curly birch, and genuine leather are chosen for performance and longevity rather than decoration alone.
- Natural Individuality: No two curly birch handles share exactly the same figure, grain, or coloration.
- Designed Around Shared Meals: The Dele’s concept connects food preparation with the act of gathering, cooking, and sharing a finished meal.
- Built for Continued Use: Maintainable materials and durable construction support long service rather than disposable outdoor cookware.
Steward’s Insight
Although the Dele is designed for outdoor cooking, treat it as a refined chef knife rather than a general camp utility blade. Use it for food preparation on wood, composite, or other knife-friendly cutting surfaces—not directly against stone, metal, glass, or ceramic.
Wash the blade by hand after use and dry it promptly before replacing the leather protector. Avoid leaving moisture, food residue, or acidic juices on the polished steel for extended periods, and do not place the knife in a dishwasher. Periodically treating the curly birch handle with a suitable food-safe wood oil will help preserve its appearance and moisture resistance.
The included leather protector is intended for storage and careful transport. It is not a conventional belt sheath and should not be treated as one.
