The Steinbit is intentionally thinner and more flexible than Helle’s general-purpose field knives, but it remains somewhat firmer than many highly flexible American fillet knives. That added control can be especially useful when working around rib bones, skinning larger fillets, or maintaining an even cutting path through dense flesh.
